Golden Roasted Chicken

Sometimes you just need a solid roasted chicken to nom on to get you fueled up for gaming or even a re-charge after a good gaming session.  But why just throw together a chicken breast, when you can have a whole chicken!


  • 1 Whole Chicken (4-5lbs)
  • 1/4 cup Kosher Salt
  • 3-4 TBS Black Pepper
  • 1 TBS Onion Powder
  • 1 TBS Garlic Powder
  • 1 TBS Thyme
  • 1 TBS Rosemary
  • 1 TBS Sage
  • 1/4 cup Melted Butter
  • 1 Onion
  • 5 Garlic Cloves
  • 1 Large Carrots
  • 4 Celery Stalks
  • 1 cup Chicken Broth or Stock
  • 1 cup of flour


  • Roasting Pan
  • Roaster Rack (if you don’t have one, no big deal)
  • Cutting Board & Knife
  • Sauce Brush
  • Measuring Cup
  • Paper Towel
  • Meat Thermometer
  • Baster
  • Aluminum Foil
  • Frying Pan (for gravy)


  1. Preheat Oven to 350º
  2. Chop up Celery, Carrots, Onion into Chunks
  3. Peel Garlic and leave cloves wholegoldenchicken1
  4. Place butter into a measuring cup and melt in the microwave
  5. Mix Kosher Salt, Black Pepper, Onion Powder, Garlic Powder, Sage, Thyme and Rosemary together to create dry rub
  6. Wash and clean chicken, removing all items from the cavity
  7. Pat chicken dry with paper towel, inside and outside
  8. Place chicken, breast up into roasting pan
  9. Rub dry rub on skin gently to not tear skin, and rub dry rub inside the chicken along the cavity walls
  10. Brush outside of chicken with melted butter, covering all areas, any excess melted butter brush inside chicken along cavity walls
  11. Stuff cavity with celery, onion, garlic cloves and carrots
  12. Pour 1 cup of chicken broth or stock in the bottom of the roasting pan
  13. Once oven is at 350, place roasting pan with chicken into oven
  14. Bake 20 minutes per pound plus an additional 10-15 minutes
  15. Periodically every 30-45 minutes baste the chicken with the chicken stock and juices to keep chicken moist
  16. Chicken is done when you insert a meat thermometer into the thigh and it reads 165º
  17. Remove chicken from oven, cover with aluminum foil and let rest for 10-15 minutes before slicing
  18. Place chicken on cutting board and slice

Gravy Directions

  1. Pour juices from roasting pan into a frying pangoldenchicken2
  2. Bring to a simmer, spoon in a little flour and whisk
  3. Continue to sprinkle in flour and whisk until gravy is at desired consistency, you may not need the full cup of flour, depending on preference
  4. Add salt and pepper to taste

Serve up with some mashed potatoes, rice, stuffing, whatever you want, the beautiful thing is any side dish compliments this well.  Just because you are a gamer on the go doesn’t mean you can eat a solid meal, this is really as easy as it gets folks.
